Creamy Pepper Dip/Dressing
1 package firm tofu (try a variety of tofu’s for thinner/thicker consistency based on your needs)
1/3 cup olive oil
1+1/2 tablespoon apple cider vinegar
juice of 1 lime
juice of 1 lemon
2 tablespoons agave nectar
4 peppers, seeded & slices (jalapeno, shisito, serrano, etc.)
1 teaspoon sea salt
Place tofu in food processor and process until consistency becomes smooth. Go ahead and start slowly adding in olive oil to assist in this process. As tofu becomes smoother, begin adding other liquids in slowly (apple cider vinegar, lime juice, lemon juice, agave nectar).
Once all liquids are blended, add in peppers and sea salt. Process until well combined. Taste, and adjust any seasonings as needed.
Use this as a dip for chips, a sour cream alternative for tacos/nachos, a salad dressing, in potato salad, or whatever else you can think of!
